Mediterranean Squash Stew


The picture above is snapshot of a Mediterranean Squash Stew that we had for supper tonight. Hubby got this recipe from the health department, he thought the recipe sounded really good and decided to try it out. Let me tell you, it was amazing! It's like a vegetarian meal, there's no meat in it, it's all pure fresh vegetables. I decided to share the recipe here, somebody might wanna try it out, especially to those who are veggie lovers. This is really good, something different and it sure satisfied my cravings, even my 4 year old liked it! Anyhow, below is the recipe for it...Enjoy!

Mediterranean Squash Stew

½ butternut squash (3 cups cubed)
¼ bunch kale (2 cups chopped)
½ onion (½ cup chopped)
2 cloves garlic
1 ¾ cups diced tomatoes
1 tablespoon lemon juice
1 tablespoon brown sugar
1 teaspoon mustard
1 teaspoon oregano
1 teaspoon salt
2 teaspoons vegetable oil
2 cups cooked rice

1. Peel and seed squash. Cut into ½-inch cubes.
2. Wash and chop kale.
3. Chop onion and mince garlic.
4. To make sauce: combine tomatoes, lemon juice, brown sugar, mustard, oregano, and salt in medium bowl; set aside.
5. Heat oil in frying pan on medium. Add onion and garlic. Saute 3 minutes, or until onion is soft.
6. Stir in squash and sauce. Cover pan, increase heat to medium-high, and cook 15 minutes, or until squash is tender.
7. Add rice and kale. Cover and cook another 5 minutes.

I'm kinda glad that I did it!

Now that I know for sure that I am pregnant, I'm kinda glad that I decided to buy the sandals that I really like a couple of weeks ago. Those would be perfect for me to wear for summer, I probably won't be wearing high heel shoes while I'm pregnant, just to be safe. They will be coming tomorrow, I'm so excited to see them! I'm just glad that I bought them before I found out I was pregnant, because I shouldn't be spending money on myself, I need to save it for the baby. Anyway, I just couldn't talk about the shoes without inserting the pictures, so they're the ones below...





unfortunately, there was one that I bought too that was out of stock and it was the one that I wanted so bad, I guess I'll just have to get that next time, it's the one pictured below...

I would love to..

..go outside to plant the bulbs that I bought the other day and at the same time get some fresh air, I have been stuck inside the house for about 2 days now, but it's just a little chilly for me to go out. I would love to see the sun shines again, whenever the weather gets like this, it's just too depressing for me, especially that I am not feeling really well. I just hate that I missed mass this morning, but I couldn't force myself, we went to bed around 3 am, I intended to go but my stomach is still bothering me and an addition, when I got up this morning I have a horrible headache! I don't understand why some pregnant woman have to experience this kind of turmoil as hard as it is, not to mention when it's time to give birth. (Sigh) I don't even want to think about that right now. Anyhow, since I couldn't go outside, might as well try to get rid off this headache by taking a nap, hopefully it will work!

God is Good!

God is good indeed for giving me and my husband another bundle of joy. This is not something we planned, we talked about it, but we didn't intended it to be this year due to our financial situation, but I always believe that for everything that happens there's always a reason, whatever reason that is I am very much happy right now, knowing that I'm gonna be holding another baby in my arms, but at the same time nervous because of the pain that I am still feeling right at this moment. I hope this pain don't have any connection of my pregnancy. My husband mention the other day about Tubal or Ectopic Pregnancy, where it is a complication of pregnancy in which the pregnancy implants outside the uterine cavity. The most common cases is where the pregnancy occurs in the fallopian tube where it can potentially become a medical emergency and if it's not treated properly it can lead to a serious problem or even death! Some of the symptoms of the Tubal or Ectopic Pregnancy are similar to the pain that I am having right now especially the pain in the lower abdomen. I hope and pray that this is not the case, now that I know for sure that I am pregnant I am looking forward to see my baby. Since I already have a hyper soon-to-be 5 year old son, I would really love if this one is a girl, but whatever God has plan for me, I accept it wholeheartedly, as long as he/she is a healthy baby!

I am so glad that I am now about 80% better! Although the pain is not completely gone, but it's not as bad as it used to. I am still having a little hard time to walk, a little bit of vibration from walking is sending pain to my stomach. I don't know if that pain has something to do with my menstruation being delayed about 11 days now. But anyway, I'm not gonna complain anymore about it, since it is almost gone. I'm gonna focus on finding a maxi dress before me and hubby's anniversary comes. Last night, I have been browsing online and I couldn't seem to find the one that suits my taste. I want it to be a vibrant colors, printed or solid, I want the main color to be either yellow, pink or white. I do not like the ones that has a spaghetti strap, because I owned a maxi dress that has a spaghetti strap and it broke on me! I don't want that to happen again. I prefer wearing long dresses than the ones that's just right above the knee, I do not like showing legs, it's because I am so conscious about my scars, my husband keeps telling me that nobody can see my scars but me, but I just couldn't help feeling ashamed of my legs :( ! Anyhow, my quest for searching the perfect dress will probably resume later this afternoon because it seems like we're almost out of internet again! Once our internet usage go over the limit we get FAP (Fair Access Policy), then our internet will go down to a dial-up like connection, and it will resume back again after 24 hours! Can you believe that? We pay $80 dollars a month for this junk and it's limited, that's what happens when you live way out of the country! There's only two options you can choose from, it's either dial-up which is about 10 dollars a month but slow as slow as Christmas, or satellite internet which is $80 a month but limited, no High-speed internet available here!

Something is terribly wrong with me!

This is the first time I'm feeling an excruciating pain like this! It started last night, I thought at first it's gas, my husband thinks I may have some kind of blockage inside, but I think it's worst that than. Every time I go try to use the toilet I keep having hot flashes, I get so dizzy, get cold sweat and my whole body turns pale, even when I get up, the pain is just unbearable, and now it seems like, some of the pain moved to my lower chest, every time I breathe, I get this sharp pain there. If this pain is not gone by tomorrow I probably won't have any choice but to go to the doctor, that's the last thing we wanna do right now! Oh God, please help me!

Out of the way!

I went to have my learner's permit renewed today, and I am glad that's out of the way! My husband made me believe that I had to take the General Test again but I didn't, the only test that I had to take was the Vision test. Now that's out of the way, I can focus on the schedules when to practice driving again, maybe once a week will be more convenient for my husband, since the gas prices is so high, we don't need to go on special trip just to to teach me how to drive. We only go out of town once or twice a week that will be perfect time to squeeze in my practice, I will be ok with that, as long as I can practice once a week. Anyhow, it seems like the DMV system has changed, before, when I got my learner's permit, they gave it to me immediately, earlier, they issued me a temporary 20-days permit and then I'll have to wait a week or two for my real permit to come in the mail. I don't have any problems with it as long as my permit will come before this temporary one runs out. Anyhow, I sure glad to get this over with and not to worry about it anymore, hopefully I will learn quickly and try to get my license before my 25th birthday!

One day I will have one!

Every time I turn around, it seems like everybody nowadays owns one of those DSLR cameras, it makes me want to have one of my own. It's not because I want to be in a competition with somebody, but it's because the picture quality is really unbelievably good! I am into scrapbooking and crafting, owning one of these cameras will really help my creations to look more professional. There is nothing better than a crispy clear high quality pictures that every details of the subject is captured, point and shoot camera don't really do the trick as much as I want it to be. But we all know how pricey one of those camera is, and another downfall is they are just too bulky for me, I want one that I could easily stick in my purse without carrying extra bag. I have been doing a researched online and I think I may have found the perfect DSLR for me, the picture below is Sony Alpha NEX-5K...


...this is in fact a DSLR, but almost half the size and weight of a regular DSLR, if I were to buy one, this will be the perfect one for me. I'm not able to afford it right now, but there will be one day, I will be able to afford it, it may take me years to save my money but it will happen! more plants...

Earlier today we went to this local nursery to buy some potting soils and more vegetable seeds. When we got there I was a little surprised how pricey most of the flowering plants there now, but anyway, I only intended to get some plants to put in my hanging pots, but wasn't able to get it because it was just too much, I did get it from a different store, anyhow, what I did buy is another pot of Columbine, I already have some of that in my garden but I did not have the color that I bought today which is purple, when I saw it, first thing popped into my head was "that baby is coming home with me", LOL! A another thing that surprised me there was the Ranunculus plant, I've seen pictures of them, in fact I have some seeds over here at the house, I was really never interested planting them, but when I saw it earlier, I couldn't believe how gorgeous they are, they somewhat resembles a rose, I got a pot of it too! Now that I've seen it in person, I'm gonna have to plant the seeds that I have here and I still got more coming from ordering plants online, they give free Ranunculus for every order. Anyway, the pictures below are the plants that I bought earlier!

This week for sure!

I already talked to my mother-in-law yesterday about taking me to the DMV to try to get my learner's permit again. I have been studying the DMV handbook last night, although I already have an idea on what the test is gonna be considering I already took it two times, but I still wanted to make sure I'll pass the exam by reviewing it again. Anyhow, I couldn't help myself from getting nervous and at the same time anxious from thinking that I'm gonna be practicing to drive again, that is if I pass the test. I'm nervous thinking about my previous lessons, there was a time that I actually ran into a ditch on the sidewalk, what a scary moment that was for me and especially to hubby, he was actually traumatized by it that he stopped teaching me for months, I can't blame him, he's got some serious heart problems and that was the last thing that we wanted to happen, but it did! Another occasion was, my mother-in-law, let me drove her 1980's straight drive truck, it was really hard for me to shift gears that I panicked and almost hit a phone pole, she about had a heart attack in fear! This time when I get to practice again, I'll make sure I'll be more cautious and won't let anything like that happen again, this is for my own good, if I want to become one of the drivers across American then I need to be more responsible! I am actually wishing right now that there are public transportation here such as jeepney or tricycle like in my native land (Philippines) so I don't have to do this, but there's no other options!
Anyhow, I'm also getting anxious for the fact that if I get my driver's license this year, I may look for a part time job to have an extra income and help out a little bit for the expenses in our household, and besides my baby is going to school this coming August, that will be a perfect time to look for one, that is if there is available one for me! But anyway, sometime this week, I'm taking the exam again, wish me luck! I'm gonna need it! (Nagpaila lang gyud bugo! LOL)

Officially spring!

Today is officially the first day of spring! But I'm not jumping for joy yet, although it's officially springtime, it doesn't mean it won't get cold again, we have at least one more time to endure this cold weather, Blackberry winter is yet to come, it will be around early weeks of May. Then maybe, I'll be jumping for joy after that, but who's to say there will no more? The weather has been so unpredictable, even the meteorologists can't make it right sometimes! But, it's only a little bit more, better enjoy this chilly weather right now, coz when it gets summertime, we all know how excruciatingly hot it will be like last year! Not looking forward for that kind of heat waves! Even though I came from Tropical country, I can't seem to tolerate that kind of weather anymore, the perfect temperature for me is about 60-75 degrees, beyond those numbers will be too hot or too cold for me! Anyway, it seems like I've been gone for ages, I did not post anything on here for a couple of days, been so busy and I'm getting ready to watch movie with my hubby right now, so bye for now!

another set...

I said the other night that I wasn't going to make another jewelry until my blisters heals up, but after I've done my household chores I got to looking at my jewelry supplies, next thing I remember, I was setting down on the floor and started threading  beads to an elastic nylon and made a necklace with a matching bracelet, I thought it turned out pretty good! I could use this jewelries that I made to sell at our 3rd Annual Rummage and Bake Sale at our Church this coming June, so that's not wasted at all! My hands are still hurting but anyhow, the picture below is the set that I made yesterday!

neglecting my other hobbies!

I have been so busy focusing on making cards and crafts lately that I have been neglecting some of my hobbies, so today I decided to take a break from making cards, also to keep my sanity from thinking of new ideas and designs! LOL! I would have love to paint to help relax my brain but the problem was, I still don't have canvas and I'm needing some new oil paint colors that I ran out the last time I painted! So I just decided to take out all my jewelry-making supplies from my closet, and I started making a set. The pictures below is the set that I made earlier. I used a stainless steel wire that put blisters on my hands which will turn into calluses in few days, the dang wire was so freaking hard as H E double sticks! I did not have any other choice, the only other wire that I have is a very thin one, so I just had to use the stainless steel one! I'm definitely taking a break from it tomorrow until my hands heals up, it's killing me right now! LOL!


Sorry I can't tell you anything about the black beads, they're maybe Onyx, I'm not sure and the tiny blue beads, don't have any idea either, the only thing I'm sure of is the wire is a stainless still that blistered my hands! LOL!

"Wish Upon a Star..."

...is the first thing that popped into my head when I saw the challenge this week at Simon Says Stamp and Show some Stars! As usual the design that I came up with is just very simple, materials used are, designed papers, glitters, doily and some rhinestones, and that's about it! I wanted to put a little personal touch to it, what a better way to do it than writing the lyrics with my own hand! I apologize for the low quality pictures...

Basketball Fans!

When I was growing up, my father and my brothers were such a big fans of basketball, they used to watched it all the time and I started to like it. It would have been nice to be able to go to watch the live games. But, we weren't able to afford to buy the tickets, so we were just contented watching it on TV.

My top priority for this year..

...is to get my driver's license before I turn 25 this coming July. I've been in the U.S. for almost 6 years, I still don't have my license. Living here in the US without a driver's license is really hard especially if you live way out in the county like me and my family. But before I can even try out for the road test, I need to take another exam to obtain another learner's permit, I already got a learner's permit about two years ago, and it expired on me last October, they're only good for one and a half years, in order for me to obtain another permit, I have to take the exam again for the third time. The first time I took the test I failed, studying a 15 year old DMV handbook has something to do with that failure, second time I barely passed, I did not get to use that permit that much, but hopefully the third time, if I pass the test, I'll be able to use my permit every week to practice maneuvers, I can drive now but I'm still having hard time turning and parking, I still get nervous, and it has been a while the last time I was in front of the steering wheel but I am so determine to get my license before I turn 25. Since spring time is coming pretty soon, it will be safe to practice driving again, so I'm gonna have to concentrate on getting my permit again this week. I haven't even peek at the DMV handbook but I have been taking driving test online, hopefully I won't have hard time passing the test this time. I'm crossing my fingers!

Best part of spring and summer...


For me, the best part of spring and summer is when I can pick my flowers and put it in the vase. I like to keep flowers inside the house, not only it keeps the house smelling fresh, it also adds a little feminine touch that will indicates there is a woman living in this household! Anyhow, these Daffodils in the picture above are growing in our yard, I decided to picked out some 'coz it has been a while since I put flowers in the house. I put them in the vase that I made long time ago, it's made out of wine bottle, all I did was painted it with acrylic paint and cut it in half using a bottle cutter that my husband bought at Michael's two years ago! Ohhh, I just love flowers, what can I say? LOL!

the reason why I love spring!

Although the weather is ever-changing, it did not stop for some of my flowers to bloom, one of the reasons why I love spring time! When I went outside earlier I noticed that one of my wild Tulips is blooming and I just couldn't help myself from taking picture of it because it is just gorgeous! First time I've seen a wild tulip, I can't wait for the rest to bloom, they should be in different colors! I also took pictures of my purple and peach Hyacinths. While, I was taking pictures of my purple Hyacinths, there were either Honey bees or Bumble bees devouring the nectar from my flowers, I thought that would be a  beautiful picture if I can capture them with my flowers, I was a little hesitant to do it for they may get distracted with my presence and sting me! Fortunately, I was able to do it without giving them the threat of harming them. Anyway the pictures below are the some of the photos I took earlier, I just love how it turned out!

Cream and Green!

 Another challenge this week at Stamp Something, the theme is Cream and Green! I wasn't going to enter on any challenge this week coz I was planning on decorating our boring frames, but I just thought that since me and hubby's 6th year anniversary is coming up pretty soon I went ahead and made the card and enter it to this week's challenge at Stamp Something. I also like the theme this week, green is my favorite color! Of course my card is just a very simply design, I used pre-folded card that came with my Sizzix embossing machine which is perfect for the theme this week since the color is cream, just added some green card stocks, embellished with pearls, buttons, well, you all get the idea by looking at the pictures. Like I said before, I'm not expecting nor hoping to win, there are so many talented and creative people that participate on this challenge, I'm just doing this for fun and a challenge to myself for more improvements!

so upsetting!

I am just so upset right now for missing an opportunity today, not only once, but thrice including the past two days! The quote "Early birds catches the worms" is indeed true! It is really hard to get up early when I (we) always go to bed very late, but I guess if I want to catch the worms first I'll just have to start getting up early. (Sigh)! This will be a good motivation for me, I've been meaning to get back to the normal schedule, like wake up 6 or 7 in the morning, hopefully I can get back in track! I just don't know what I'm gonna do now, I guess I'll just have to work on the frames like I planned last night, lucky for those who were able to take some of that opportunities, kudos to them! Hopefully next time I'll be one of them!

I haven't cut anything with my cricut today, all I did was lay on the couch and sat in front of my computer and browsing online. I'm still exhausted from yesterday, I worked my butt off cutting and decorating the flowers, although my brain wants to do some more cutting but my body is not cooperating with me, so I guess I'll just have to wait and see how I feel tomorrow. My plan for tomorrow is to decorate our picture frames because they look really boring, hopefully it will turn out the way I want it. Anyway, I'm getting off here, American Idol is coming up pretty soon, I sure don't want to miss tonight's show, it's the elimination round, I guess I'll see you all tomorrow! I'm really loving it!

I have been using my cricut machine all day today, I just love how I can do some other chores while my machine is cutting and it makes a lot at a time, I don't know what I have been missing all those days that it's been hiding in my closet, I could have cut a lot of stuff with it, but now, I'm not letting it back in my closet, it's gonna stay where it's at, coz I'm gonna be using it mostly everyday. Anyway, I probably cut about over a hundred flowers today, the cutting did not take all day, it was designing the flowers what took all day, actually I just got done embellishing my flowers. The reason why I'm  working so hard on these is I'm gonna try to sell them online. The picture below are the flowers that I spent all my day decorating, it is really hard to work on those tiny rhinestone, I have to use a jewelry tweezer coz they tend to stick on my fingers and the tweezer was just perfect to do the job!

using my Cricut Machine again!

I finally decided to use my cricut machine again after about a year hiding in my closet, I am just too lazy to get it out and put it back again, but I'm lazier to sketch flowers and cut it manually, so despite the fact that I'm not thrilled getting it out of my closet, I don't have any choice but to do it and besides, it can cut a lot more at just one press of a button . I kinda miss using it anyway, and I still got to learn how to use it without hooking it up to my laptop, I had it for over a year now but I still haven't figure out how to use all the buttons on it, I can only do the basics. Anyway the flowers in the picture below are what I had cut with my cricut machine last night, and I embellished it with some buttons and rhinestones. I think they turned out pretty good!

Paper flower and butterfly!

 Aren't the butterfly and the flower cute? I love how you can make a lot of different cute and pretty things out of a piece of paper! For those of you who's interested in learning how to make these, let me show you a little step by step, let's start with the flower first....

The flower is really easy, it's the same steps as the felt flower except I used different papers making it and also the individual flowers are different sizes.

♥♥♥ What I did first is sketched a basic shape flower on different pieces of paper, I also made it different sizes like in the pictures shown below...

this piece of paper is a pink polka dot design like you see on the flower, I sketched the flower on the back so it's much easier to see and cut...

♥♥♥ Next, I cut out the flowers from the papers, and stack them together, you don't have to do exactly what I did, you can do whatever you want to it, but I like to layer mine and I think the more the layer the prettier the flower would look, I put the smallest flower on the top, bent the petals a little bit and topped it with pearl as you can see in the pictures below...

...don't you think it's cute? The special part about it is, you made it yourself! You can actually take pride of it!

♥♥♥ Now it's time for the butterfly, it's very easy too! Ok, this is how I made mine, I picked out a piece of paper that has a lot of colors coz I wanted my butterfly to be colorful, I then turned it to the back side, folded it, along the folded line I drew just half of the butterfly like in the picture shown below...




...the reason I did that so my butterfly will have the same size wings, when you cut it, it will look like in the picture below...




I actually made two of this so I can glue them together, they'll have the same color top and bottom like in the pictures shown below...





After I glued them together, I let it dry and folded it in half and it looked like in the picture below...




I added it to the card that I made before that used to look really plain, the first picture above is the card that I am talking about.

Good Morning!

It's a surprise when I'm up this early but only on Sundays though because we get up about 7 and get ready for church, mass starts at 9. How I wish I can get up this early everyday, back to a normal schedule, but of course it's hard to do that if I keep or shall I say, WE keep going to bed really late! There's really nothing interesting during the day time, that's also one of the reason why we're in the night shift! LOL! Make your own craft flowers!

 

My mind was really speechless today, I did not have a clue what should I post on my blogs until later tonight. After several hours of thinking of new craft ideas to make, I finally came up with something using felt paper. I know I'm not the only one that came up with this idea, I've seen a lot of people making different kinds of stuff using felt paper but this one is completely my original idea, I'm not copying anybody else's creation! Below is the step by step how I made these cute flowers.

 ♥♥♥ First, I took a piece of cardboard and drew a flower design on it, two different sizes, I cut it out and used it as a template to trace onto the felt paper...

♥♥♥I then cut out the flowers that I have traced onto the felt paper, I decided to cut out three big ones and one small one so I can layer them together, it's just a personal preference, I think they look much prettier when they are layered...

♥♥♥ I wanted my flower to have leaves too, so I drew a basic leaf shape onto green felt paper, first I folded the felt paper, the reason I did that, so you don't have to cut out the leaves twice, you can save some time doing this, and then it is much easier to sew it to the flower when they're connected like in the picture shown below...

♥♥♥ Now, it's assembly time! So what I did is, I put a piece of a button on top of my layered flowers and put the leaves on the bottom so I can sew them all at one time...

♥♥♥ After I've sewn them together, I decided to put some clear rhinestones on the petals and the leaves so the flowers would look like it has mist or water drops on them...

♥♥♥As you will notice in the picture that the two flowers have different settings on the leaves, the pink flower's leaves is exactly the same as the purple, but what I did is twisted the leaves...see the picture below...

This week's challenges...


I made this card especially as for an entry of this week's challenges of Creative Inspirations' Challenge 101 "In the Garden" and Simon Says Stamp Challenge "No Cook Recipe. What I did is I've drawn a Hummingbird as the focal point of the card, and used satin flowers and embellished it with some rhinestones,  that's about it, so simple and easy to make. Oh the lacy circle frame of the Hummingbird is a piece of 6 inches disposable doily! Hope you all enjoy this!

Treasure Box

I made this box so I can put my handmade cards in it, it maybe a piece of garbage for some, but those are some of the things that I consider personal treasures. Sometimes, a piece of treasure is not always an expensive jewelry or other things that cost  tons of money, sometimes it's just a simple things that means a lot to you. Anyhow, the pictures below are the before and after I covered it with designed papers and decorations...

I made it out of a shoe box, top is before and bottom is after...

I chose that particular shoe box because it already has an attached lid to it...
